Slow cooked this short rib the other day and it was spectacular! Just browned them, then made the base by frying in sesame oil - onion, garlic, ginger, carrots, lemongrass, star anise, brown sugar. Added stock, soy, Shaoxing rice wine, lime leaf, a few sichuan peppers (just coz I had them) put the meat back in and cooked low and slow 4 hrs. Took the meat out blitzed the sauce and sautéed mushrooms and chillies in the same pan and added everything back into the pan for a bit - sticky rice 🍚 done!!
