Had lots of pork chops to use up! I guess it's a kind of a basic Hari-inspired curry with the pork marinaded in lemon juice, yogurt, ginger, garlic, chilli, turmeric, cayenne and garam masala. Cooked with cinnamon, cardamom and curry leaves. Then simmered with the rest of the marinade and some coconut milk knocking around in the fridge. Asparagus from the garden, and black rice! And the rosé wine comes from near Toulouse. A region called Fronton. It's light, yet aromatic and goes well with the notes of cardamom and coconut. Have a lovely evening everyone!
