Got a great one from my resent trip to the Maldives. This is a local Maldivian tuna curry known as Dihon Riha The Tuna from here is unique and all caught using traditional methods. it’s either snap Jack or yellow fin tuna and it’s so meaty and is great to cook with. This is super quick and very tasty! 1 tsp turmeric powder 1/2 tsp salt 500g of tuna steak , cut into chunks 1 tbsp of coconut oil 2 cardamom pods , seeds only 10 curry leaves 1 onion, sliced 3 garlic cloves , finely sliced 3cm piece fresh ginger, grated 1 green chilli , finely sliced 1 onion, finely sliced 1 tsp fennel seeds, ground 1 tsp cumin seeds, ground 1 tsp black pepper 400ml of coconut milk 1 stick of cassia bark sea salt 1. Sprinkle salt and turmeric over fish 2. Heat the coconut oil and add cardamom and curry leaves 3. Stir in onions, garlic, for 10 minutes. Then add ginger and chilli. Sauté - around 30 seconds 4. Grind the fennel and cumin seeds, Add to pan with the black pepper. 5. once aromatic remove from heat and cool. Transfer into a food processor and blitz to make a coarse paste. 6. Add the cassia bark to the pan then add the paste back in and pour in the coconut milk. 7. Bring to a simmer and cook for 3-5 minutes 8. Add the fish pieces to the sauce., it will cook in 5-6 minutes. Check seasoning and serve with rice
