Hello you amazing people!! So I’ve had a few days in Lagos this week - just heading home now. I’m sure I have mentioned it before but the pepper soup is exceptional!! I had fish and goat pepper soup this time and it’s not for the faint hearted so I know you guys will love it!! So easy to make but you need to soup spice and I’m still trying to unpick the spices that are in it. But for now this is what the chef gave me: Nigerian Goat Pepper Soup 500g Goat meat diced cut into small sizes
2 tsp spoonful pepper soup spices
1 Chilli Pepper - habanero 
2 teaspoonful Dry Uziza - use basil leaves
1 tbsp ground Crayfish (optional - not too much don’t want this to over power or miss it out)
1 lamb stock cube 
1 Onion minced
1 tsp Salt (or to taste)
Water (as needed) 

1. Mix the diced meat with minced onions and salt to taste.
2. Put it in a pan and leave the meat to simmer in its own juice for 10 minutes then add a little water and cook gently for 30 minutes. 3. Add enough water to cover the meat and add a lamb stock cube with the pepper soup spice, ground crayfish and chilli pepper. Leave to simmer until the meat is tender (30 mins to and hour). 4. Add the basil leaves, stir and check the seasoning - serve with bread. If anyone has any other local recipes please share with us!!
