Eggs Benedict with a twist from me - who is going to give it a go? 2 tomatoes, chopped 1 garlic clove, sliced 1⁄2 tsp ginger, grated 1⁄2 tsp kalongi seeds 1⁄2 tsp cumin seeds 1 naan 1 tsp butter 2 tbsp hollandaise sauce 1⁄2 tsp turmeric 4 slices of bacon 2 fresh eggs 2 tsp Cider vinegar Handful of spinach 1⁄2 tsp chili flakes 3 springs fresh coriander, chopped 1. Heat oil and add the cumin seeds as they sizzle, add the ginger and garlic. Stir and add the tomatoes. 2. Sprinkle in the kalongi seeds, season with salt and stir. Add the spinach until wilted 3–4 minutes. Set to one side. 3. Smear the naan with butter and toast in the oven 4. Heat the hollandaise sauce and sprinkle in 1⁄2 tsp of turmeric and stir through. 5. Heat oil in a pan and cook the bacon rashers until crispy. 6. To poach the 2 eggs you need to bring a large saucepan of water to the boil. Add the cider vinegar. Super fresh eggs are the best - Crack each egg into a small glass or ramekin. Using a large spoon swirl the water to create a whirlpool in the pan. Carefully pour the eggs one by one into the center of the whirlpool and turn the heat down to a simmer. Cook until the white is completely cooked and firm with a runny yolk, 3–4 minutes. Use a slotted spoon to remove each egg and place on a kitchen towel. 7. Top the warmed naan with the seasoned spinach mixture and crispy bacon. Place the perfectly poached eggs on top and pour over the heated turmeric hollandaise. 8. Sprinkle the remaining kalongi seeds, chili flakes and coriander over the top to serve. To make - TANGY TURMERIC HOLLANDAISE 1. Separating two eggs with the whites in one bowl and the yolk in another. 2. Melt 100g of unsalted butter in a small pan. 3. Put the bowl of egg yolks over a pan of gently simmering water. Add 1 tbsp of lemon juice and 1 tsp of mustard and whisk together well until fluffy. 4. Very slowly pour tiny amounts of the butter into the yolks and whisk. 5. Have an ice cube to hand because if the mixture looks like it might split add the ice cube and whisk. 6. The hollandaise should be smooth and silky. If it feels too thick you can add a little white wine vinegar to loosen it. 7. Add 1⁄2 tsp turmeric and whisk.
