Had a awesome visit to The Maldives last week. The tuna they have is very specific to that region so I enjoyed a few local dishes. Here is one that I think you might like! Maldivian tuna curry - Dihon Riha 500g of tuna steak , cut into chunks 1 tbsp of coconut oil 3 garlic cloves, finely chopped Seeds from 2 cardamom pods 3cm piece of fresh ginger, grated 10 curry leaves 1 green chilli, sliced 1 onion, finely sliced 1/2 tsp ground fennel seeds 1/2 tsp ground cumin 1/2 tsp ground turmeric 1/2 tsp black pepper 400ml of coconut milk 1 stick of cassia sea salt fresh coriander 1. Lightly salt the fish and set aside 2. Heat the coconut oil until it simmers and add the cardamom and onion slices. Cook until softened, around 10 minutes. 3. Add in the garlic, ginger, curry leaves and chilli. 3. Add the fennel, cumin, turmeric and black pepper and once aromatic remove from the heat and blend in a food processor to make a paste. 4. Put the paste back into the pan with the cassia and heat over a medium. Pour in the coconut milk and ½ tsp of salt 5. Bring to a simmer and place in the fish pieces. Cook for 5-6 mins until fish is cooked through and tender. 6. Finish with fresh coriander and serve with plain rice
