Hi , the recipe for the Indian duck breast says add the star anise to the pan. is this whole star anise or ground ? Is it to flavour and cook with the fat or is it supposed to be sprinkled over the duck breast ? Help please !

Thanks , I actually did what you are saying and it was lovely . The tamarind jam is a total revelation by the way !! ☺

Hi @roy c sorry for the confusion it’s just to infuse a little flavour into the oil and leave a aniseed aromatic. You could add a little powder if you prefer a stronger flavour but that’s not intended. Hope that helps!
