Good to hear it’s a favourite @kevin.roper and it’s amazing that you are cooking these dishes in the sun in France!!

mmm not so sure, i'm messing around at the fringes of the recipe.
The key are the two spice blends which are totally unchanged and we all know where they came from don't we 😍
thanks for the comments all the same, had to look up broom @Sue Geen 🤣🤣🤣🤣💥🌶️

hi @Sue Geen a few little tweaks but mainly for personal preference.
I marinade the chicken with the Madras powder and soy sauce overnight or during the day.
I use 2 birds eye green chillies chopped and fry them before adding the liquid.
for the liquid I add psssata and chicken stock.
it will look very thin and watery but just reduce it down for around 15/20 minutes.
when it gets deep add the chicken and lemon juice, cover and cook low heat for only around 10/12 minutes as the chicken will cook very quickly.
just cut into a piece to check
I also sometimes add Geeta lime and chilli chutney with liquid.
let it sit for an hour and it should be good.
