My hens are in Wahay Laying Mode and I collect about 7 or 8 eggs per day at mo. So had the idea of making Hari’s Anda Di Sabjee. Our coriander hasn’t grown enough yet so I toasted some coriander seeds and ground them in pestle and mortar instead. Really flavoursome and easy curry to make; as usual your recipes are well-explained and easy to follow - thank you Hari 🤗

I'm sure Hari said she doesn't peel ginger @Nadliow! Your eggs look super and the picture makes me want to make this curry, but I'm in the car, as a passenger, on our way to Gatwick for 10 days in the sun in Turkey! HOORAY !🤣😄😃💕

Was wondering @Hari Ghotra; do you peel fresh ginger or not? Most of my recipe books ask to peel it but one says not to. What do you do?

Thanks Max - yes it was; and the cooking time for the eggs that Hari states is just perfect. The eggs are cooked through but not to the point of the yolks becoming grey. I needed to use up my eggs but this is a great recipe for vegetarians too 👍🏽
