Hi sorry late to the party looks fab @andrewsherman you are the second person to post about this dish tonight. I love this dish! The coconut powder adds so much depth, sweetness and coconut flavour as well as thickening. The coconut powder is great in lots of dishes. It melts into the dish which is why I use it. Thanks for posting this!!

Ah I see, a bit more of concentrated flavour too maybe? Wouldn’t know about that unless I made it without. Don’t suppose it would hurt making it without it? Or substitute for a bit of block coconut? Maybe @Hari Ghotra may be able to comment on this?

@andrewsherman oh I just meant about cooking with it. It's a new one on me, so I was curious as to what it 'gave' to the recipe. Thickening the sauce probably satisfies my curiosity! Thank you.

@Jo Dunn what do you mean? It was easy to use and I think it may have slightly thickened the sauce, maybe. If you mean about me finding and getting the powder, I used my local whole food shop ‘Helens’. No local supermarket stocked it!
