@Hari Ghotra can i use the vindaloo basic with just potatos as that is what my son would prefer or are there any tweeks i should consider

@jenny52 yes that should work just fine. Make sure you cook the base though first so all the flavours have tine to mingle before adding potatoes. Let me know how you get on.

I’ve never made vindaloo but looking forward to hearing how you get on with your vegetarian / potato version. It sounds lovely. I’ve started using baby potatoes a lot in curry as it’s so quick. Good luck.

how about adding paneer or tofu for protein @jenny52 . alternatively aubergine will add a nice 'meaty' texture. all would soak up the vindaloo flavour. alternatively you could make some small falafel and add those.

Ah ok. No good then. 👎I'm sure you could do it as a potato curry in vindaloo sauce!. You'll need protein too, say a dhal or chickpea side curry to go with it.

luckily my son is not veggie but his partner is and would be horrified to know any meat had been anywhere near her veggie dinner whether for flavour or not x 🤣🤣

Hi @jenny52 . You could compromise and make the pork vindaloo leaving the pork in for all the flavour that the meat would give, but also add potatoes in to the recipe. Then serve the vindaloo without meat pieces to the veggie eaters? 💕

yes @Sue Geen. l love it with pork but he has been getting Vegetable Vindaloo as takeaway but has said he would actually prefer just potato
