has anyone slow cooked shoulder of lamb in a masala tent style foil fashion.
any fat skimming issues ??

@Mark Harvey usually with a foil lid it’s to allows for evaporation - this is fine with this cut. Shoulder will be fatty but the flavour of the meat will be amazing. Depends how much the fat bothers you. Yes you can do that or just let it settle and skim it off.

nope I'm doing it on the bone but I've seen recipes where they say they let the sauce go cold to skim off the fat from the lamb
tent style just means raised foil as opposed to tight fitting @Hari Ghotra

Do you mean it’s too big for the lid @Mark Harvey and you need a foil tent?
